I was feeling creative a couple of weeks ago and also because I had some zucchini I needed to use up. I had just made the Carrot Breakfast Cake and really liked it. So I was thinking that I could easily change up the carrots for zucchini... and I like to combination of cinnamon and cloves with the chocolate. So these ended up being my paleo version of my Chocolate Zucchini Cake recipe. Ok, there’s chocolate chips, but they don’t really count. Do they? These would be a little heavy for a dessert, but they taste like a treat. Healthy too! I did enjoy them with a friend today with our tea. She liked them too. There’s very little sweetener in the protein packed bars. You could even eat these for breakfast or take them on a hike. You can substitute protein powder for the coconut flour too. This recipe makes a lot, so throw some in the freezer for those rushed days when you need a healthy bite.
