When it's -20 degree Celsius outside, the last thing I feel like eating is something cold. I want to get back to eating properly and stop the eating all those treats that we enjoy during the Christmas season. It's time to get back to my routine. I still want my salad, but I just can't bring myself to make one for lunch today. It's just too cold out there. Here is one of my favorites. I love spinach in the frig. It can be cooked or not or in a smoothy. Try my Winter Salad - be creative. WINTER SALAD by Jayne Holgate Prep Time: 5 minutes Cook Time: 5 - 7 minutes 6069193 Ingredients (1 serving)
Instructions In a large skillet over medium heat, sauté onions and mushrooms in your choice of oil. I usually use a bit of butter and olive oil. Add beans and grated carrots. Season. Add the spinach and cook continue cooking until vegetables to your liking. Top with your favorite cheese. Powered by Recipage
